Summer Tuna Avocado Salad

This salad is flavourful, fresh and simple. The arugula (or rocket as most of us know it) brings a nice peppery crunch, the avocado a soft, creamy compliment and finally tuna fish turns this simple salad into something filling and delicious!

How to do it

  • 2 tablespoons freshly squeezed lemon juice

  • 1 tablespoon balsamic vinegar

  • 1 teaspoon Dijon Mustard

  • 1 teaspoon honey

  • 1/4 cup extra-virgin olive oil

  • 4 to 5 handfuls baby arugula

  • 300 gram canned tuna

  • 1 medium sliced avocado

  • 5-6 cherry tomatoes, halved

  • 1 large crisp cucumber, sliced

  • 1 red onion, sliced

  • olives

  • salt and black pepper

*  Adjust the amount of each ingredient according to your taste

  • Whisk together lemon juice, balsamic, Dijon, and a pinch of salt and crank of pepper in a small bowl until well combined.

  • Add honey and slowly whisk in olive oil until well combined.

  • Arrange arugula in a salad serving bowl and top with tuna, avocado, tomatoes, cucumber, red onion, and olives.

  • Drizzle with the dressing and serve.
